Vegetarian Restaurant Hiltl Poster
Ambrosius Hiltl a tailor by trade and frequent patron of the Hiltl Vegetarian Restaurant was asked to take over the management of the business in 1903. At that time the daily turnover was 35 francs; the linen inventory included four threadbare towels! He ran the business together with Martha Gneupel, employed as cook and part-time waitress, and soon demonstrated that vegetarian food could be both varied and tasty.
